USB-C power source
I'm just curious if there are any guidelines on the kind of USB-C power sources to use? E.g, if I use a 20W apple charger plug am I going to fry my stereopi?

To say briefly, StereoPi's USB C hardware configuration always says to the USB C power source "hey, I need 5V!!!". So you can use any kind of USB C PSU. Please check it is able to provide the current you need (avoid cheap no-name items).
JFYI, I'm successfully powering up my StereoPi V2 using the Apple 87W USB-C power source from my MacBook Pro. And the 20W PSU from iPad too.
