I made live stream into Skybox application (available on Oculus Go/Quest). Here is an update file for StereoPi
Just install this update on StereoPi. After reboot, turn on Oculus Go, run Skybox video player, go into "Airscreen", press "Search device" and click on "STEREO-PI". "Livestream RTSP" works only if RTSP enabled in StereoPi config. Better to use "Livestream MPEG-TS", latency is much less.

Gol, thank you for your code! But looks like I didn't yet added to Wiki updates installation procedure for S.L.P. image... I 'll add it tomorrow, I promise!

Looks like I've already added Update description in our Wiki. It is at the end of this section.
So for installing this update with the Skybox player support, you can use this guide.

Is there any way to get Skybox to show "fullscreen"?

It is better to ask Sergey. AFAIK no...

Skybox not needed for fullscreen. Just use our app viewtopic.php?f=10&t=20
